Ingredients
¾ cup coarsely chopped seeded dates
¼ cup water
¼ tsp bicarbonate of soda
1 ½ cups white self - raising flour
1 cup whole-meal self - raising flour
1 tsp mixed spice
¾ cup firmly packed brown sugar
1 egg, beaten lightly
1 cup buttermilk
½ cup vegetable oil
Cinnamon Frosting
90g packaged cream cheese
90g butter
1 cup icing sugar mixture
1 tsp ground cinnamon
Preparation
- Preheat oven to moderately hot. Grease 12-hole muffin pan.
- Combine dates and the water in small saucepan, bring to a boil. Remove from heat, add soda; stand for 5 minutes.
- Sift dry ingredients into large bowl; stir in date mixture and remaining ingredients. Spoon mixture into prepared pan. Bake in moderately hot oven about 20 minutes. Spread top of cold muffins with cinnamon frosting.
- Cinnamon Frosting: Beat cheese and butter in small bowl with electric mixer until as white as possible. Gradually beat in combined icing sugar and cinnamon. Makes 12 Per Serving 19.7g fat; 1636kj
