Ingredients

1 lb. package pitted dates, chopped

1/4 stick vegan butter

1 c. dry sweetener

2 tsp. baking soda

1/2 mashed banana or other egg replacer equivalent to one egg

1 tsp. vanilla

2 2/3 c. flour

1 c. walnuts

Preparation

Preheat oven to 320F. Boil 1 1/2 c. water in a medium saucepan. When boiling, add chopped dates, butter and dry sweetener. Let cool. Add baking soda, “egg,” vanilla, flour and walnuts. Stir, pour two into greased and flour loaf pans. Bake for 45-50 minutes or until cooked through.
