Ingredients

1 jalapeno pepper, diced

2 large roma tomatoes, grilled

2 large roma tomatoes, raw

4 cloves garlic, peeled

1 medium size yellow onion, diced

1/2 cup cilantro, chopped

2 tablespoons olive oil

2 tablespoons honey

Juice of 1 lime

Salt and pepper

Preparation

Prepare barbecue, medium-hot. Using large bowl, season 2 roma tomatoes with 1/2 teaspoon olive oil, salt and pepper, toss to coat. Grill 2 seasoned tomatoes until slightly blackened, about 3-5 minutes per side. Return tomatoes to bowl and let cool. Once cooled, dice grilled tomatoes to “salsa size” chunks. Put salsa size chunks back in bowl, with juices and seeds. Dice raw tomatoes to similar size, removing seeds and cores. Dice onion and add to bowl. Dice jalapeno pepper and garlic to very small size and add to bowl (remove seeds of jalapeno for a mild salsa). Finely chop cilantro and add to bowl. Add remaining olive oil, honey and lime juice. Season with salt and pepper; then stir thoroughly. Cover and chill for 2-4 hours before serving.
