Ingredients
1 lb firm fleshed mildfish, e.g. Tilapia
1 mediuma white onion, minced
1 large red onion, slivered
6 large cloves of garlic
2 limes
1 tsp coarse sea salt
1 tsp cayenne pepper
peanut oil to deep fry
Preparation
Cut fish in large chunks, about 1.5". Wash and dry.
Make a paste of garlic, lime juice and cayenne pepper in a blender.
Coat fish and marinate for an hour
Shake off excess paste from each fish piece and fry a few at time for 2 minutes or so, so that fish is cruncy outside but tender inside.
Serve with slivered red onion.
