cups All Purpose Flour

teaspoon salt

teaspoon nutmeg

cups (2 medium) cubed peeled pears

1/2

cup skim milk

tablespoons oil

egg

tablespoons sugar

teaspoon finely grated lemon peel

Preparation

Heat oven to 400°F. Line 12 muffin cups with paper baking cups and spray lightly with nonstick cooking spray, or spray 12 muffin cups.

Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, 1/3 cup sugar, baking powder, salt and nutmeg; mix well. Add pears; toss to coat.

In small bowl, combine milk, oil and egg; beat well. Add to dry ingredients; stir just until dry ingredients are moistened. DO NOT OVER MIX. Divide batter evenly among paper-lined muffin cups.

In small bowl, combine topping ingredients; mix well. Sprinkle over batter in cups.

Bake at 400°F. for 15 to 20 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Serve warm.
