Ingredients
l 1/3 c. vegetable oil
2 1/2 c. sugar
4 eggs slightly beaten
2 tsp. vanilla
2 small jars baby food carrots
or 2/3 cup cooked mashed carrots
3 cup flour
2 tsp. cinnamon
2 tsp baking soda
l tsp. salt
1 cup of coconut
1 c. chopped nuts
1 eight oz. can crushed pineapple, drained
Preparation
oven at 350. Mix all ingredients togetherand beat with wooden spoon. Bake for 30 min in two 8" or 9" inch prepared pans. Also bundt cake; may have to bake for extra 10 minutes. Frost with cream cheese frosting.
