Ingredients

2 hard boiled eggs

2 T olive oil

½ t paprika

2 t mustard

1 T chopped fresh Italian Parsley or ½ t dried dill

water as needed

1.5 lbs salmon fillet

Preparation

Mash the hard boiled eggs and put all ingredients in a sauce pan. Stir, adding water until reaching the correct consistency for a sauce. Heat for 15 minutes. Serve with salmon.

Grill salmon or oven bake.

Oven baked salmon: Preheat oven & saute pan to 400 degrees Oil pan if not non-stick, or line the bottom of the pan with foil. Place Salmon fillets in the pan, skin side down. Baked 10-11 min. for 1" thick or until done. Cover the pan for a moist surface, uncovered for crispier surface. Serve with sauce
