Ingredients

Leftover meat or fish, I use a lot of leftover chicken or roasts for this

Pasta, rice, or potatoes, whichever you prefer

Chopped Onions

Vegetable, fresh or frozen

Herbs, fresh or dried, I like oregano, thyme, or cilantro

Salt & Pepper

Oil

Acid in some form, could be vinegar, could be citrus juice, could be wine, whatever you have on hand

Preparation

Brown your onions, and cook your starch as usual, if using potatoes cook them with the onions, otherwise wait to introduce the starch until everything is ready. Take your leaftover meat and cut it into managable bite size pieces, and add to your skillet. If using fresh vegetables add straight to skillet, if using frozen blanch them first then add into skillet. Add your starch, your herb(s), salt and pepper, oil and acid components. Pan fry all your ingredients together for 5-10 minutes to combine flavors. Serve when ready.
