1 Cup Snow Peas

1/2 large white onion, chopped

1 Roma Tomato, sliced then quartered

1TBSP Capers, sliced

Preparation

Carmelize onion in oil with salt and pepper, start water for blanching snow peas, add tomato and capers for last 1 min of onions, re-season, blanch snow peas in water for no more than 2 min, then shock in ice water to stop cooking process. Combine snow peas and onion and tomato mixture and serve with fish or beef or meat of your choice. Usually takes me about 25-30 minutes to prepare.
