Ingredients
1/2 Cup Fresh Snow Peas topped and tailed
1 Medium to large Shallot chopped
1/2 Medium to Large Poblano Pepper chopped
Preparation
Brown your onions and peppers in a nice hot skillet for about 2 minutes just until the onions start to get color. Remove them from heat and set aside. Blanch your snow peas in boiling water for 2 minutes, then shock them by plunging them in an ice bath to stop the cooking, this should help keep them crisp. Cook everything in the skillet over medium high heat for 60-90 seconds together. Enjoy
