Ingredients
1/4 c rice
2-3 c vegetable broth
2 clove garlic, minced
1/4 medium onion, minced
1 tbsp dried dill, more if fresh
1 tbsp olive oil
Preparation
Saute the onion and garlic in the olive oil. When they are done to your taste, toss in the rice. Carefully stir the mixture as it heats, being sure not to burn the rice but just brown it. Add 1 c of the broth and bring to a slow boil. Add more broth as the rice begins to absorb it, preferably 1/4 c at a time. Do this until the mixture has reached the consistency and rice doneness that you desire. It may not take all the broth, or it may take more, depending on the kind of rice used. When it has reached the desired doneness, add the dill, stir through making sure to heat it for a bit.
