Ingredients

-4 slices thick bacon, chopped

-1 C sweet onion, chopped

-1-10 oz pkg of frozen chopped spinach (thawed, squeezed dry)

-1/2 C heavy cream

-1/4 t nutmeg

-1 3/4 C (7 oz) Extra Sharp Cheddar Cheese

Preparation

  1. Cook bacon in a skillet until crisp
  2. Transfer bacon to a paper towel, keeping 1 T of drippings in pan
  3. Add onions and sauté in bacon drippings (about 5 minutes)
  4. Add spinach, sauté 2 minutes
  5. Stir in cream and nutmeg, remove from heat
  6. Stir in cheese and reserved bacon
  7. Spread mixture into a 9-inch pie plate
  8. Bake at 375 for 20 minutes
  9. Serve warm with pita or tortilla chips
