Ingredients
-4 slices thick bacon, chopped
-1 C sweet onion, chopped
-1-10 oz pkg of frozen chopped spinach (thawed, squeezed dry)
-1/2 C heavy cream
-1/4 t nutmeg
-1 3/4 C (7 oz) Extra Sharp Cheddar Cheese
Preparation
- Cook bacon in a skillet until crisp
- Transfer bacon to a paper towel, keeping 1 T of drippings in pan
- Add onions and sauté in bacon drippings (about 5 minutes)
- Add spinach, sauté 2 minutes
- Stir in cream and nutmeg, remove from heat
- Stir in cheese and reserved bacon
- Spread mixture into a 9-inch pie plate
- Bake at 375 for 20 minutes
- Serve warm with pita or tortilla chips
