Ingredients
1 1/3 C water
1/2 C sugar
1 vanilla bean, split lengthwise
1 C fresh mint leaves
1 bottle (750ml) white wine
2 limes, sliced thin
2 oranges, sliced thin
2 peaches or nectarines sliced
2 C chilled club soda
Preparation
Bring first 3 ingredients to a boil in a saucepan. Remove from heat. Add half the mint leaves and let cool. Cover and infuse for 8 hours or overnight. Strain to remove the bean and leaves. In a large pitcher. combine infusion, remaining mint , wine, and fruit. Let chill in refrigerator for at least 2 hours. Stir in soda just before serving over ice.
