Ingredients

1 Can 14 oz. black eyed peas, drained and rinsed

1 can 14 oz. black beans, drained and rinsed

1 can 15 oz. white hominy or chick peas, drained and rinsed

2 medium tomatoes, chopped

4 green onions, chopped

2 garlic cloves, crushed

1 medium bell pepper, sweet red, or yellow pepper seeded and chopped

1 jalapeno pepper, seeded and chopped

1/2 cup chopped onion

1/2 cup chopped fresh parsley or cilantro

8 oz. of your favorite Italien salad dressing

Preparation

Combine all ingredients in a medium bowl, mixing well. Chill at least 2 hours or overnight to blend flavors. Drain before serving. Serve with Tortilla chips.
