Ingredients
1 can light red kidney beans
1 can dark red kidney beans
1 can black beans
1 large can diced tomatoes
1 large can crushed tomatoes
1 can chili-seasoned Rotel
1 can black olives, sliced
1 16-oz pkg frozen mixed vegetables
1 pkg Williams chili seasoning mix
1 medium onion
1 large yellow pepper
mushrooms (lots!)
Preparation
Cut up onion, pepper, and mushrooms. Open all the cans. Drain the kidney beans, but not the black beans. Mix everything well in large pot. Cook an hour or so on low to medium heat. Serve, and embellish with whatever you like! (i.e., cheese, sour cream, fritos, etc.!)
