Ingredients

4 skinless, boneless chicken breast

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 cup apple butter

3 tablespoons cider vinegar

1 tablespoon canola oil

3/4 teaspoon apple pie spice

2 apples, cored and cut into 1/2 inch rings

Preparation

  1. Sprinkle chicken with salt and pepper, set aside.
  2. In a small bowl, combine apple butter, vinegar, oil, and apple pie spice. Set aside 1/4 cup of the mixture for apples. Remaining is for chicken.
  3. Place chicken on grill. Brush chicken with the reserved apple butter mixture. Cover and grill for 5 minutes. Turn chicken; brush again with apple butter mixture.
  4. Brush both sides of each slice with 1/4 cup of mixture. Cover and grill for 10 to 14 minutes more or until chicken is tender and no longer pink (170°F) turning apples once.
