Ingredients

1 salmon fish head

1 apple

800ml chicken stock

2cm ginger,sliced

10pcs of the chinese herb called “mak-tong”

1/2tsp salt

cooking oil,use as much as needed

Preparation

1)cut the fish head in half.then slice the apple into 4equalwedges & remove the seeds.heat the cooking oil in a large wok.then,pan-fry the fish head till brown & then set it aside to cool. 2)next,blanch the fish head in hot water for 1@2seconds to remove some of the excess oil & drain dry. 3)next,put the fish head,apple,sliced ginger & mak-tong herbsin a soup bowl.add in the chicken stock & steam itfor15-20minutes.before serving,add some salt.this dish is usually servedin the same bowl that is used for the steaming.
