Ingredients

2 tablespoons ground flax seed

6 tablespoons water

1/2 cup canola oil

1/2 cup apple sauce

2/3 cup sugar

1/2 cup soured milk (sour by adding 1 teaspoon vinegar)

1 teaspoon vanilla

2 1/2 cups flour

4 tablespoons cocoa

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

2 cups shredded zucchini

1/2 cup chocolate chips

Preparation

Mix flax seed and water together; set aside.

Place oil, apple sauce, sugar and your mixture in bowl; cream.

Add all remaining ingredients except zucchini and chocolate chips; mix well.

Stir in zucchini. Pour into greased 9 x 13 pan. Sprinkle chocolate chips on top. Bake at 350 degrees for 40 minutes.
