Ingredients

3 c. flour

1 tsp. baking soda

1 tsp. cinnamon

2 c. sugar

1 tsp. salt

1-1/2 c. cooking oil (not olive oil)

1 8-oz can crushed pineapple, undrained

1-1/2 tsp. vanilla

3 eggs

2 c. diced bananas

optional:

1 tsp. nutmeg

1 tsp. almond extract

1/2 c. flaked coconut

1/2 c. chopped walnuts or pecans

Preparation

Mix dry ingredients together. Add oil, pineapple, vanilla, and eggs to dry ingredients. Mix well (do not beat). Add bananas. Turn into bundt pan. Bake at 350 degrees for 1 hour 20 minutes, or til toothpick comes out clean.
