Ingredients
1 spray vegetable oil spray
2 large onions, sliced
2 cups mushrooms, sliced
2 large carrots, grated
2 cups baby spinach leaves
7 cups boiling water
2 tablespoons Dr. Fuhrman’s MatoZest
1 can garbanzo beans, rinsed and drained
1 cup cooked brown rice
Preparation
Boil water and assemble ingredients. Spray large soup pot with vegetable spray and stir fry sliced onions for 3 minutes. Stir in sliced mushrooms, then grated carrots, then spinach leaves. Pour in water and add Dr. Fuhrman’s MatoZest seasoning. Stir in the garbanzo beans and cooked rice. Simmer 5 minutes while you set the table – and serve with a smile. It’s a quick, nutritious and delicious meal in a bowl. (*As an option, if you don’t have cooked rice you can add 1/2 cup raw, uncooked rice and increase simmering time by 25 minutes.)
