Ingredients
1 C smooth peanut butter
1 C dark brown sugar
1/2 C unsalted butter
2 TBS corn syrup
1 TBS vanilla extract
2 large eggs
2/3 C white whole wheat flour
2/3 C oat flour
1 tsp baking soda
1/2 C peanut butter chips
1/2 C butterscotch chips
1/2 C granulated sugar for coating
Preparation
Use silicon baking sheets or parchment paper to line cookie sheets, and set aside. Beat together the first 6 ingredients until well-blended (2-3 minutes). Add the flours and baking soda. Add the chips. Chill at least 1 hour or longer. Overnight is better. Using a 1 inch cookie scoop, make a ball of dough. Roll it in granulated sugar. Place on cookie sheet and flatten gently with fingers or the bottom of a glass. Bake x 15-17 minutes (for chewy cookies) or 18-20 (for crispy). Cool on cookie sheets for 10 minutes, then move to baking racks to finish cooling.
