Ingredients

2 cups uncooked Arborio rice

4-5 cups Apple or Pineapple juice

2 tablespoons butter

4 tablespoons Olive oil

1 1/2 cups Swiss cheese diced

1/2 cup dried cranberries

1/2 cup dried figs (diced)

1/2 cup dried apricots

1/2 cup your choice dried fruit

salt,pepper to taste

4 cloves garlic

1 medium onion

2 teaspoons dry sage

Preparation

Sautee fruit,onion, and rice in butter and Olive oil for 5-6 minutes. Add garlic and sage. Sautee 2-3 minutes. Slowly add juice, one cup at a time over medium heat, until rice is fully cooked. Add more juice if necessary. Finally, add cheese until melted. Garnish with fresh chopped parsley before serving.
