Ingredients
2c all purpose flour
2t baking powder
1/2t baking soda
1t sugar
3/4t salt
1c cold buttermilk
8T unsalted butter, melted and cooled
2 additional T melted butter (optional)
Preparation
Whisk dry ingredients together in a large bowl. Set aside. Add buttermilk to a 2nd bowl. Drizzle in butter; it will start to clump up as you stir. Stir wet ingredients into dry until dough comes together and comes away from sides of bowl.
Spray a 1/4c measuring cup with cooking spray. Use it to scoop dough onto a parchment-lined baking sheet, about 1.5 inches apart.
Bake at 475 degrees for 12-14 minutes. Brush tops with 2T melted butter if desired. Remove from pan and set on a rack to cool.
