Ingredients

1 1/2 lbs Maple Leaf Farms boneless, skinless duck breast

1 T balsamic vinegar or red wine vinegar

1/3 c red wine

1/2 c apricot preserves

1/4 c olive oil

36 6-inch wooden skewers

1 each green and red pepper, sliced to 1" squares.

2 cans (16 oz)apricot halves

Preparation

(1) Cut duck into 1-inch cubes (2) Mix vinegar, wine, preserves and oil in large bowl. Add duck & stir to combine. Marinate for 4 hours. (3) Soak skewers in water for at least 4 hours. (4) Drain the duck. Drain the skewers. Thread one duck cube on one skewer followed by a red or green pepper piece, another duck piece, and an apricot half and ending with another cube of duck. (5) Broil or grill for 5 to 8 minutes. Serve hot.
