Ingredients

1 cup sifted flour

1 1/2 tsp baking powder

1/2 tsp salt

3 tblsp sugar

1/4 cup shortening

1 egg

1/4 cup milk

3 1/4 cup pared sliced apples

1/2 tsp cinnamon

1/4 tsp nutmeg

2 tblsp melted butter

Preparation

Sift flour, baking powder, salt and 1 tblsp of the sugar. Cut in shortening (mom used butter or margarine) with two knives or a pastry blender until the mixture is like coarse corn meal. Stir in combined egg and milk with a fork. Spread in a greased pan about 10x6x2. Arrange apples in parallel rows on top. Sprinkle with the cinnamon and nutmeg combined with the remaining 2 tblsp sugar. Then sprinkle with melted butter. Bake in a moderately hot over of 400 degrees for 40-45 minutes, or until apples are tender.

Dutch Peach Cake: Substitute 5 fresh peaches which have been peeled, pitted and sliced.

Dutch Plum Cake: Substitute 4-5 plums which have ben pitted and cut in eitghths. Use the Italian plums which are usually available in August.
