Ingredients

Crust:

2 C Flour

1 C Br.sugar

3/4 C Butter (melted)

1/2 C quick cooking oats

Filling:

1 1/4 C water

3 Tb. cornstarch

2/3 C sugar

1 tsp. vanilla

3 C diced & peeled apples

(1/2 granny smith, 1/2 fuji)

Preparation

  1. Mix all crust ingredients (reserve 1 C for topping)
  2. Press into ungreased 9" pie plate.
  3. Combine sugar, water, cornstarch in saucepan, bring to a boil about 1 minute on med.-high heat until thick, while stirring some.
  4. Remove from heat, then stir in apples and vanilla.
  5. Pour filling into crust
  6. sprinkle mixture on top
  7. Bake @ 350 degrees for 35-40 min. until crust is golden brown.
