Ingredients

1 C. all-purpose flour

1 Tbs. sugar

1 1/4 C.skim milk (original calls for whole)

2 large eggs

1/4 tsp. salt

1 Tbs. unsalted butter

Confectioner’s sugar

Preparation

Preheat oven to 375. Melt butter in pan. In large bowl, combine flour, sugar, milk, eggs and salt. Stir until combined. Pour batter into pan and bake until edges have risen and are golden brown, and center is set. Remove from oven and dust with confectioners’ sugar. Serve with fresh fruit.
