Ingredients
The Bread:
1 Stick of fresh French baguette
1/4 cup of butter, melted
Bruschetta:
2 Medium cloves of garlic, minced or pressed
4 vine ripened tomatoes, sliced in half, seeds removed, then diced (roma tomatoes are also a good option since they have less juices)
3/4 Sweet white onion, diced
3/4 tbsp oregano
1/2 cup chopped fresh flat leaf parsley
1/2 cup chopped fresh cilantro
1/4 cup balsamic vinegar
1/4 cup of extra virgin olive oil
Salt and pepper to taste (more salt is actually nice
Preparation
Preheat oven to 400F.
Toss all the bruschetta ingredients together and let sit for about 30mins for flavours to soak in.
Slice the baguette diagonally, approximately 1/2 inch thick then brush with melted butter. Toast the bread in oven until golden (about 5-7 mins - watch closely!)
Top the baguette toasts with bruschetta and serve immediately.
