Ingredients
2 packages yeast
1/4 cup lukewarm milk
1 teaspoon sugar
1/2 cup butter
2/3 cup sugar
lemon and orange rind
1 teaspoon salt
3/4 cup scalded milk
4 eggs beaten
6 cups flour
Preparation
In a small bowl, proof the yeast with 1/4 cup milk and 1 teaspoon sugar. In a large bowl, combine softened butter, sugar, rind and salt. Add in scalded milk while hot. Stir well-cool mix to lukewarm. Add yeast mix. Add 4 eggs and 2 cups flour. Beat with electric mixer, medium for 2 minutes. Add in 2 more cups of flour and either use mixture or by hand. Dough should be soft and slightly sticky. Add more flour if needed. Turn dough out, knead in 1 1/2 cups flour-knead about 10 minutes or until smooth and satiny. Form dough in ball, place in a greased bowl. Cover and let rise to double its size. Punch down, divide into loaves. Cover and let rise again, double in size. Brush with butter and bake.
