Ingredients

3 or 4 ripe bananas, mashed

1 1/2 cups of all-purpose flour

1/3 cup melted butter or oil

3/4 cup sugar

1 egg, beaten

1 teaspoon vanilla

1 teaspoon baking soda

Pinch of salt

Preparation

Preheat the oven to 350°F. In a large bowl, mix butter into the mashed bananas. Stir in sugar, egg, and vanilla. Then stir in the baking soda and salt. Finally, mix in the flour. Pour mixture into a buttered loaf pan. Bake for up to 1 hour. Cool on a rack.
