Ingredients
2 tbsp olive oil
1 medium onion chopped fine
1 tbsp minced garlic
1 tsp ground cumin
Salt & pepper to taste
2 cans Bush’s Black Beans
2 cups cooked rice
Preparation
Prepare rice according to package directions. In a 3qt saucepan over medium high heat, saute the onion and garlic in olive oil until edges of onion just start to brown. Add black beans - do not drain off the liquid. Add cumin, salt and pepper Bring to a boil then turn down to simmer for 10 to 15 minutes. Serve over rice.
