Ingredients

1 loaf french bread

4 cooked lasagna pasta sheets

3 medium slicing tomatoes

2 plum tomatoes

6 slices mozzarella cheese

1 cup shredded parmesan cheese

4 T extra virgin olive oil

a few sprigs fresh basil

fresh italian parsley

Preparation

preheat oven to 350 *slice the three tomatoes very thin 1/8". set aside. *in a food processor puree plum tomatoes, olive oil, and basil. *slice french bread lengthwise open to form two halves, cut ends upward facing. *spread the puree on both halves of the bread. *place 2 lasagna noodles on each half bread. *place half of the tomatoes on top of the lasagna noodles. *place 3 slices of mozzarella on each half, covering the length of the bread. *place the remaining tomato slices on the bread. *generously sprinkle 1/2 cup of parmesan for each half loaf. *bake on cookie sheet for aprox. 10-15 minutes until cheese is melty and tomatoes are soft, then broil quickly a few minutes until extra hot and bubbly. garnish with parsley, if desired.
