Ingredients

1 pound (2 medium) sweet potatoes

Boiling water

1 tsp orange zest

1/2 c orange juice

2 tbsp brown sugar

1 tbsp butter

1/2 tsp pumpkin pie spice

1/4 tsp salt

Preparation

Peel and slice potatoes. Place them in a large skillet cover with boiling water. Cover and cook for 10 minutes until the potatoes are tender. Drain.

Sauce: In a small bowl, combine the orange zest, orange juice, brown sugar, butter, pumpkin pie spice and salt. Pour over the drained potatoes. Bring to a boil and cook, uncovered, for 5 minutes or until potatoes are glazed, spooning the sauce over them occasionally.
