Ingredients

4 cups of prepared rice

2 cups turkey or chicken (picked from bone)

1 can Campbell mushroom soup

1 medium carrot grated

1/2 cup chopped celery

1/2 cup frozen or fresh peas

1/4 cup chopped onion

1/2 teaspoon oregano

1/4 teaspoon black pepper

1/2 teaspoon creole or Cajun seasoning

1/2 teaspoon parsley

1Tablespoon chicken seasoning or 1 cube chicken bouillon

1/2 cup milk

Grated cheese for top

Preparation

Prepare rice. In a medium bowl mix all the other ingredients together, except the cheese for the top of the casserole. Toss in rice until it is well coated Grease a casserole pan (fits into a 9x9). Pat rice mixture into prepared pan. Cover with cheese. Bake uncovered at 350 degrees for 45 minutes
