Ingredients

3 Chicken Breast (Bite size pieces)

1 Small Onion (Chopped)

2 Cloves Garlic (Crushed)

1-2 Tbsp Olive Oil

2 1/2 Tbsp Patak’s Curry Paste

1 Cup Diced/Crushed Tomatoes

4 Medium Potatoes (Large Bite Size Pieces)

2 Cups Water

1-2 Tsp Salt

Pepper to Taste

Preparation

In large sauce pan, add chicken and fry until no longer pink, add onion and garlic and cook until opaque. Add potatoes, curry paste, diced tomatoes, salt and pepper. Add water, making sure that water level covers all ingredients, bring to a boil, then reduce heat to simmer and cook for about 45 minutes or until sauce has thickened. Serve over rice.
