Ingredients
1 Tsp Canola Oil
1 Clove Garlic, Minced
1 Can Black Beans, drained & rinsed
1 Can Corn, drained & rinsed
1 Can Diced Tomatoes, drained
1/2 Tsp Chili Powder
1/4 Tsp Cumin
1/2 Bunch Green Onions, sliced (both white and green portions, keep seperated)
Preparation
Heat oil in pan over medium heat. Add garlic and saute for 1 minute. Add white portion of green onion and saute an additional minute. Add corn, beans, tomato, and spices. Simmer covered for 10-12 minutes. Add green portion of green onions and simmer an additional minute. Done! Enjoy!
