Ingredients

1/4 cup egg substitute

1/4 cup butter, melted

1 (8 3/4 ounce) can cream style corn

1 (8 1/2 oz) package corn muffin mix –tricky to find in the baking aisle. It is a small box. I think Jif is the brand name.

1 (8oz) carton plain fat-free yogurt

Preparation

Preheat oven to 350 degrees. Combine first 6 ingredients in a medium bowl; stir well. Pour into an 8 inch square baking dish coated with cooking spray or butter. Bake at 350 degrees for 45 minutes or until set.
