Ingredients

1 onion chopped

1 stick butter

1 can whole kernel corn (drain half of the liquid)

1 can cream style corn

1 cup sour cream

1 box Jiffy corn muffin mix

1/2 jalapeno pepper chopped fine (optional)

salt and pepper to taste

Preparation

Put the onion and butter in a bowl and microwave until the onion is clear. About one minute. In another bowl mix the rest of the ingredients, including onions, mix well. Grease an oblong glass baking pan and pour the mixture in. Place in and preheated 350 degree oven and bake 45 minutes or until golden brown.
