Ingredients

One can of hormel corn beef.

One small bag of frozen potatoes O’brian (or any cubed hash browns).

Salt

Black Pepper

Eggs

Preparation

In a large skillet cover bottom with olive oil or canola oil. Pour potatoes into skillet (as many as desired. Once Potatoes start to soften add the whole can of corned beef. Slowly flod the corn beef into the potatoes. Reduce heat to low and cover skillet. cook slowly and turn/mix the contents every few minutes. When the mixture seems appropriate turn heat off and let it rest.

Poach eggs. Place one on top of each serving. Serve with toast.
