Ingredients

1 large onion

1 jalapeno, seeded and chopped

2 T. oil

1 t. salt

2 T. tomato paste

2 t. curry powder

1/2 t. ground ginger

4 Roma tomatoes, chopped

1 c. water

1 lb. peeled medium shrimp

Optional: raita and limes for garnish

Preparation

saute first four ingredients to soften. add: tomato paste, curry, ginger, tomatoes and water. Cook on med-hi heat for 3-5 minutes. add: shrimp, cook 3-5 minutes, until shrimp is pink.
