Ingredients

1 eggplant, cut in 1/2" slices

1/4 c. oil

1 c. sauce

1 tsp grated onion

1 clove garlic, minced

1/2 t salt

1/3 c. Parmasean cheese

4 oz. sliced mozzerella

Preparation

Place eggplant sliced on greased broiler pan. Brush w/oil. Broil 4-5" from heat for 4-5 min. Turn, b rush again. Broil 4 min.

Combine sauce, onion, garlic and salt. Spread each slice and parmasean cheese. Top w/Mozzerella and broil 1-2 min.
