Ingredients
1/2 CUP BUTTER OR MARGARINE
1 EGG
2 TBS. LEMON JUICE
1/4 TEASPOON SALT
FEW GRAINS CAYENNE PEPPER
Preparation
MELT BUTTER IN TOP OF DOUBLE BROILER OVER HOT, NOT BOILING WATER.
ADD EGG, LEMON JUICE, SALT AND CAYENNE. BEAT WITH ROTARY BEATER OR WIRE WHISK UNTIL MIXTURE IS THICK.
REMOVE AT ONCE FROM HOT WATER. SERVE OVER EGGS OR VEGETABLES.
MAKES 3/4 CUPS OF SAUCE.
