Ingredients
6 peices chicken( i serving size); 2 boneless pork chops thin cut; italian sausage (2); 12 small prawns(large shrimp)10 to 14 oz (approx) can tomatoes; small can tom paste;lge onion; herbs(oregano
basil etc) to taste
2 cloves garlic;olives
3 tbspns capers. Wine(optional)
Preparation
Saute onion & garlic, toss in chicken, pork(can use ham), sausage, (can add beef) cook over medium heat about 15 minutes. Add tomatoes, herbs, wine(red or white), if no wine then use chicken or vegetable boullion,(amount sufficent to keep liquid just above meat. Add tom. paste.Cover. Low heat to simmer. 1 hr check liquid, add if necessary.Add capers Cook another hour or more, 20 minutes before you want to eat add can of olives. 5 minutes before you wish to eat add prawns and turn up heat to boil for about 4 minuts. Serve with pasta.
