Ingredients

2 (5 oz) bags of Spring Mix Salad Blend (or greens of choice)

1 lb. pre-cooked and shelled shrimp

1/4 lb. Feta cheese or goat cheese, crumbled

1/8 cup fresh cilantro, chopped

2 tablespoons capers (optional)

balsamic vinagrette, purchased

salt & pepper to taste

1 lemon cut into wedges

Preparation

Place all ingredients except vinagrette into serving bowl. Place a wedge of lemon at side of four individual bowls or plates. Toss salad in large bowl and pass along with dressing to each guest. Season with salt and pepper to taste.
