Ingredients
4 Beaten Eggs
2 Cups Sugar
1 1/2 Cup Oil
3 jars (4 1/2 oz) baby food - pureed carrots
2 1/2 Cups Flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
Optional:
pecans (1/4 cup chopped)
raisins (1/4 cup)
coconut (1/4 cup)
Frosting:(Double if doing layer cake)
3 oz cream cheese room temp
1 Tblsp butter
1 tsp vanilla
2 cups powdered sugar
Preparation
beat first 4 ingredients well
stir in dry ingredients until completely blended
bake at 350 degrees for 35 minutes (9x13 pan) Less if making in 2 round cake pans. Done when toothpick in center comes out clean.
Frosting: Beat cream cheese, butter, and vanilla together, add powder sugar 1/2 cup at a time until throughly blended.
