Ingredients

3T olive oil

1t fresh ginger grated to a pulp

1t garlic crushed to a pulp

1t ground cumin

1t ground coriander

11/2 t curry powder

1/8-1/4 t cayenne pepper

7oz skinned boned chicken thighs

6oz red split lentils washed and drained

1.2 litres chicken stock

1t salt

1T lemon juice

1T finely chopped fresh coriander

Preparation

saute and simmer for 45 minutes..add lemon juice at the end
