Ingredients
1 box rotini pasta (16 ounces)
1 green pepper, chopped
1 red pepper, chopped
1 small cucumber, chopped
5 Roma tomatoes, chopped
1 cup balsamic dressing
10-15 fresh basil leaves, chopped
1/2 cup freshly grated parmesan cheese
Salt and pepper, to taste
Preparation
In a large pot of boiling water with salt, add the rotini pasta. Cook until al dente. Drain and rinse the pasta with cold water.
In a large bowl, add the pasta and vegetables. Stir in the balsamic dressing until pasta noodles and vegetables are well coated.
Add basil, parmesan cheese, and salt and pepper, to taste. Stir well.
Serve cold.
