Ingredients

Tablespoon butter

1/4 cup olive oil

1/4 cup yellow onion, diced

2 cloves garlic, minced

1/4 cup white wine (Sauvignon Blanc is good)

2 cups fresh spinach leaves

1/2 cup canned diced tomatoes with some juice

salt and pepper

Juice of 1/4 of a lemon

2 small servings pasta

Preparation

  1. Boil water for pasta.
  2. Melt butter in medium saucepan over medium-high heat, then add olive oil.
  3. Saute onions until soft and translucent (about 5 minutes. Meanwhile, add pasta to boiling water and cook according to al dente directions if you like your pasta soft(or one minute less if you like your pasta al dente).
  4. Add garlic, then wine and simmer for a few minutes, stirring occasionally.
  5. Add salt and pepper and tomatoes.
  6. Add spinach until wilted and then lemon juice.
  7. Drain cooked pasta and then add to saucepan and mix with sauce over heat for 1 minute. ENJOY!! : )
