Ingredients
Tablespoon butter
1/4 cup olive oil
1/4 cup yellow onion, diced
2 cloves garlic, minced
1/4 cup white wine (Sauvignon Blanc is good)
2 cups fresh spinach leaves
1/2 cup canned diced tomatoes with some juice
salt and pepper
Juice of 1/4 of a lemon
2 small servings pasta
Preparation
- Boil water for pasta.
- Melt butter in medium saucepan over medium-high heat, then add olive oil.
- Saute onions until soft and translucent (about 5 minutes. Meanwhile, add pasta to boiling water and cook according to al dente directions if you like your pasta soft(or one minute less if you like your pasta al dente).
- Add garlic, then wine and simmer for a few minutes, stirring occasionally.
- Add salt and pepper and tomatoes.
- Add spinach until wilted and then lemon juice.
- Drain cooked pasta and then add to saucepan and mix with sauce over heat for 1 minute. ENJOY!! : )
