Ingredients

1 cup chunky or creamy peanut butter

3/4 cup lightly packed brown sugar

1 large egg

3/4 tsp baking soda

1/2 cup additional peanuts, if desired

Preparation

  1. Heat oven to 350 degrees.
  2. Line two baking sheets with parchment paper.
  3. Using an electric mixer, beat all ingredients in a large bowl until fully incorporated.
  4. Drop level teaspoons of dough onto the prepared baking sheets spacing them 1 1/2 inches apart.
  5. Bake until cookies are puffed and starting to look lightly brown around the edges, 8 to 10 minutes.
  6. Let the cookies cool on the sheets for 5 minutes, then transfer to a wire cooling rack to cool completely.
