Ingredients
300g Spinach or Chard, washed, drained and chopped in 1/2 inch strips
400g Pasta spirals, shells or similar
1tbs Butter
2tbs Olive Oil
200ml Low fat creme fraiche
100g Hard Italian cheese like Parmesan, grated
250g Shrimp (optional)
Salt pepper and nutmeg to taste
Preparation
Bring a large pan of water to boil and add the pasta and allow to simmer, when cooked, drain well. While the pasta cooks, heat the butter and oil in a large pan, add the prepared greens, cook till tender then drain and squeeze out as much liquid as possible, add creme fraiche and cheese and season to taste. Heat mixture gently, then blend till smooth, then add cooked shrimp if using. Add to the cooked pasta, toss and serve
